Thanksgiving features food. The Pilgrims worked hard to make the new world their home, and this was their celebration. The menu is usually the same. The table is jammed with turkey, stuffing and all the trimmings. History aside, families also like to get everyone together in one room. The food may be similar, but Thanksgiving dinner recipes have as much variety as the colors of the leaves on the November trees.

How about this recipe for a delicious appetizer? Move the pumpkin from dessert to the start of the meal as a savory Pumpkin soup. Butter and oil simmer over a medium heat. Add three sliced leeks (only the white) and saute until the leeks are soft. Now throw in some pumpkin puree along with cloves, cinnamon, ground ginger and some salt. After that’s all mixed, add 32 ounces of vegetable broth. Add brown sugar. Bring it to a low boil then let it simmer for 10 minutes. If desired pour a tsp or so of cream or half and half into the bowl before adding soup and a dash of cinnamon. That soup is a real treat.

A turkey can be fried instead of broiled. You may think it’s greasy but it isn’t. The oil can’t penetrate the skin after the hot oil sears it. Buy a turkey fryer. Check the meat with a meat thermometer and the oil temperature with an oil thermometer. Fry outside in a large open area. Heat the oil to between 325 degrees and 350 degrees F. The turkey takes about three minutes per pound to fry to about 170 degrees F in the breast. Dressing isn’t fried inside the turkey, but spices can be injected into it.

Try hazelnut pumpkin soup or a butternut squash stuffing. The list of delicious appetizers is endless. Try something different like cheese wrapped asparagus. Both sliced and spread cheese go into this one. A blue cheese spread over slices of swiss can be good. Wrap the asparagus with the slices spread with the soft cheese, then bake until tender at 230C. The asparagus prepared this way loses its health appeal. But Thanksgiving isn’t a time for a diet. Live a little!

People love dinner theater, the idea of enjoying a meal while seeing a show has been around since the first dinner theater opened in 1962. 40 year old Chanhassen theater started only a few years after the first and continues to entertain people in 2008. A lot of top quality shows play there each year.

This theater is huge. The 90,000 square foot complex boasts multiple theaters and dining rooms. The Main Dinner Theater is the largest theater space in Chanhassen. The capacity is 541 people. Meals are served to these people while they enjoy the show. Other theaters include the Fireside Theater where guests watch a play after dining in a separate room, and the Playhouse Theater which is the smallest theater in the facility. Similar to a stadium luxury box, the Director’s Room overlooks the Main Dinner Theater . People can enjoy private meals while watching the play. Different states in America offer different types of Mexican food. One type is Tex-Mex food. It is found in the state of Texas and consists of Mexican-American dishes. The dishes made in the Tex-Mex style are similar to regular Mexican foods such as burritos, but the difference is the type of chile pepper they use. In Tex-Mex food, green chile pepper is used. Tex-Mex is considered “America’s oldest original cuisine” by some. Tex-Mex got its name back in 1875. It started when the Texas-Mexican
Railway was nicknamed Tex-Mex to refer to the railroad and describe the Mexicans that were born in Texas. The mission era blended Texas foods with Spanish and Mexican. It got its name by the Tejanos (Hispanics born in Texas). The different regions of the state kept the foods similar to each other. Eventually other meats such as goat and cow’s head gained popularity. In the twentieth century, cheese was added because it was readily available and
inexpensive in the United States.

More than 60% of the population of Texas has ancestors that were from Mexico. It is no surprise as to why that state has become popular for its Tex-Mex
dishes. Tex-Mex is most popular in the South Central part of the state, which includes the cities of Austin and San Antonio. Tex-Mex dishes commonly use the ingredients of garlic, sour cream, cilantro, beans, avocado, and chorizo, which is a spicy Mexican sausage that originated from Spain. Chiles are also important in Tex-Mex dishes.

Some Mexican dishes that have a different taste in Tex-Mex include chorizo. It is a sausage that is spicy, being seasoned with red chile and garlic. It is a food that can be served at breakfast. The Tex-Mex chorizo is said to taste different by its spice blend. Tortillas in Tex-Mex cuisine are also different. The tortillas are usually more thick and less chewy then tortillas found in other places. Posole is a stew that Tex-Mex has put their twist into. Tex-Mex
style has many green chiles added to it, which makes it a lot different than the traditional dish.

Salsa picante is a thin sauce with pureed red peppers, onions, and tomatoes with added spices. The spices are similar to others that you would find in typical Tex-Mex dishes. The chili sauce added is also similar to both Tex-Mex style and Louisiana hot sauce. Picante sauce is very common and is an added condiment to add an extra punch of heat to any dish.

Even the salsa is a bit different in the Tex-Mex style. Typical salsa will include tomatoes, chiles, onions, and other spices. In Tex-Mex cuisine, the salsa has a large amount of cilantro added.

Whatever restaurant you go to, you are likely to have chile sauce on top of your dish. If you are not used to the hotness, you might have to take it slow. Start with small foods like salsa. You will get used to the strength and before

Selecting The Right Wine For That Special Occasion

Selecting the right wine really depends upon personal tastes.  You can do research on the various vineyards, what was a good year for a particular wine, etc. but the bottom line is what do you like.  We have listed a few things to look for in a really great wine below to try to make your next purchase a successful one.

1. The Whites: When your guests first arrive and are enjoying the appetizers a white wine is always the perfect choice. They are commonly lighter and drier and leave the palate fresh for the main entree’. Some of the whites such as the Chardonnay can also be introduced during a rich dinner such as “Coq a Vin”, with its beautiful creamy wine sauce. Another suggestion is the Sauvignon Blanc that is excellent served with a first course salad or shrimp cocktail or even a plate of delicate fish.

The Cadillac of the whites would be a sparkling champagne.  A good champagne would be served at only those very special events in one’s life.

2. Red Wines:  A nice hearty red wine such as a Merlot or Burgundy would be perfect with an Italian meal or with grilled steak, pork or lamb.  Serving a good red with a meal can actually help to enhance the dinner.

A really nice red wine produced mostly in Oregon is the Pinot Noir.  With its blend of plum, vanilla and blackberry flavors it would be a nice addition to any meal.

When hosting a spicy Mexican meal the Shiraz is a perfect compliment with its peppery flavor that brings out the spiciness of your enchilada suiza or chili verde.

A Chianti is a perfect choice for a hearty lasagna or spaghetti dinner.  You do not have to spend a lot to get a good Chianti. Who can resist those cute little bottles wrapped in the basket weave?

When serving beef, either roasted, braised or barbecued, a hearty Burgundy would be the perfect choice.

As you can see from the suggestions above you may wish to have both a white wine and a red wine on hand when hosting a dinner. Some guests will most likely pick the wine they prefer and stay with that choice for the entire evening. Another may choose a white for the start of the evening and finish with a red. So always be prepared.
